Curated · Never paid for

Volume One: Late Summer

We travel the country to find the small places that do things properly – and we tell their story in full. No advertising. No paid placement. Only what earns its place.

This is not a restaurant guide

Norway is full of places nobody writes about.

A dairy on a mountain farm outside Røros. A quay in Lofoten where the fish still hangs to dry. A cider house in Hardanger run by the fourth generation. They rarely have a marketing budget – and they never needed one. They need someone to tell the story properly.

That is all we do. We visit, we listen, we photograph, and we publish the story in Norwegian and English. Places cannot buy their way in.

How a story is presented

We are in the middle of our first visits. Below is an example of how a story is presented. The first real stories go up once the visits are done.

Weathered timber fish warehouse on piles over the water in Henningsvær, drying racks behind

Chapter I · Example story visit

Sjøhuset Rå

Henningsvær · Lofoten

Three generations of stockfish, one dining room with eleven seats, and a cook who refuses to serve anything caught more than a day ago.

Read the story

A summer mountain farm with turf-roofed timber buildings on open upland pasture

Chapter II · Example story visit

Setertun

Røros · Trøndelag

A summer dairy 700 metres up, where the butter still changes colour with the season and nothing leaves the farm in a lorry.

Words: Roger & Cato // Photography: Roger & Cato // Røros

Read the story

An apple orchard on a slope above the fjord in Hardanger, fruit ready to pick

Chapter III · Example story visit

Kvernhuset

Ulvik · Hardanger

Fourth-generation cider from an orchard on a 30-degree slope. The press is from 1954 and they see no reason to replace it.

Taste Norway Selected

Five criteria. Nothing else.

A place qualifies on merit alone. No place has ever paid to be included, and no place ever will. This is the whole basis of the platform.

  • I

    Authenticity

Real people doing real work, not a concept designed for visitors.

  • II

    Story

A history worth telling – of a family, a craft, a place or a decision.

  • III

    Quality

Consistent craftsmanship in what is served, made or grown.

  • IV

    Unique experience

Something you cannot get anywhere else in Norway.

  • V

    Local value

The place contributes to its own community, not just to itself.

For places

Do you run a place that belongs here?

We are looking for the first 50 places in Norway to join the Founding 50. You cannot buy a place on the platform – selection is on the five criteria alone. What you can buy is the work: the visit, the interview, the photography and the story, told properly in two languages.
